We are pleased to introduce the story behind the Maple Leaf Tofu brand – an inspiring culinary journey that merges the rich culinary traditions of Vietnam and Canada. The Story of Maple Leaf Tofu

My name is Châu Hùng Minh, a Vietnamese expatriate who has lived in Canada for over 15 years. Throughout this time, I have had the opportunity to work and explore Canada’s diverse and rich culinary culture. My passion for food has led me down many paths, from baking and preparing desserts to delving deeply into the unique natural ingredients of the land of maple leaves.

The journey to establish the Maple Leaf Tofu brand truly began on a business trip back to my homeland, Vietnam. During a visit to Hanoi, I took the chance to explore Ninh Bình, a province famous for its stunning landscapes like Tràng An and Hang Múa. While waiting for a boat tour in Ninh Bình, I happened upon a simple yet remarkable dish – ginger-infused tofu served by a local vendor.
Although simple, consisting of soft tofu paired with aromatic ginger water, this dish left a lasting impression on me. Despite being served cold instead of warm as traditionally done, it retained the unique flavors of Northern Vietnames

e cuisine, bringing to mind the maple syrup tofu dessert I once tasted in Canada. At that moment, an idea sparked in my mind: why not combine these two flavors to create an entirely new dish?

The Distinctiveness of Maple Leaf Tofu

Upon returning to Canada, I began researching and experimenting to bring this idea to life. Tofu is also popular in Canada, but its preparation and ingredients differ significantly from those in Vietnam. In Canada, maple syrup – a unique natural ingredient – is widely used in sweet dishes. This syrup has a light, natural sweetness that imparts a unique flavor found nowhere else.
With this, I envisioned creating traditional Vietnamese tofu using Canadian ingredients, resulting in a dish that preserves the purity of Vietnamese cuisine while embodying the spirit of the land of maple leaves. After months of research and testing, I succeeded in developing a new product – Maple Leaf Tofu. This dish is not only soft and delicious but also combines the refreshing quality of tofu with the natural sweetness of maple syrup, creating a distinctive yet familiar flavor.
